Pork Chops and Stuffing With Veggies
Ingredients:
6 decent size bone-in pork chops (marinate/season to taste)
3 boxes seasoned stuffing mix
3 small cans (8¼oz) of green beans
1 can (15oz) carrots
1 can (15oz) mushrooms
1 stick butter
1 tsp olive oil
Instructions:
Coat bottom/sides of a 18x12x1 sheet pan with olive oil. Place seasoned chops, evenly spaced, on the bottom. Pour stuffing mix in a mixing bowl. Empty contents of cans, including liquid, into the bowl and mix thoroughly. Cover chops with stuffing and spread into the corners, smoothing the surface. Melt the stick of butter in the microwave (~1min.). Spread evenly on top of the stuffing. Try not to dig into the raw mixture before you put it into a preheated 400° oven for 45-60 minutes.

The amount of time varies, in large part, based on the thickness of the pork chops. My original intent was to use four 15oz cans of vegetables, but what I had on hand forced a modification. Obviously, you can adjust the veggies used to your preference. Be sure to keep an eye on the amount of liquid and do not water down your stuffing mix too much. Excess liquid can increase the cooking time and reduce the level of browning and crunch, two of my favorite things.
